Making Pasta in Arches & Canyonlands + Camping in Moab

Spend the week with us on the eighth stop of our cross country road trip and the last two on our list of Utah's 'Mighty 5' National Parks, Canyonlands AND Arches National Parks!

We stayed at the Sun Outdoors in Downtown Moab, just outside Arches & Canyonlands National Parks. The campground was super convenient and allowed us to walk into town whenever we wanted!

We visited Canyonlands when we got into town, stopped at some of the incredible overlooks, went on a hike and made some pasta at Candlestick Overlook right before we enjoyed wine & cheese and watched sunset!

I made a pasta salad with fresh pasta, sun dried tomatoes, corn, crispy prosciutto, fresh parsley, feta and a balsamic vinaigrette.

On the last day, we explored Arches, hiking about 12 miles total on the Devils Garden Trail and Delicate Arch Trail - both hikes were amazing and highly recommended!

After our hike, I made fresh orecchiette right in front of Balanced Rock and that night I cooked it up with a ham & pea cream sauce - it was incredible and just what we needed after a loooong day!

Ham & Pea Cream Sauce: 1 stick butter + 1 cup heavy cream + 1/2 cup parm + 1/2 cup pecorino + ham + peas
