Home Made Chicken Noodle Soup

• 6 ea Boneless Chicken Thighs cut in half
• 1/2 ea Onion Medium, diced
• 2 ea Celery Stalks, small diced
• 2ea Carots, thinly sliced
• 4ea Garlic Cloves. Finely chopped
• 2ea Bay leaves
• 1/2 tsp Poultry Seasoning
• 1/4 tsp Tarragon
• 1/4 tsp Thyme
• 1 Tbsp Butter or ghee
• 3 qts Chicken Broth
• 1 tsp Chicken base powder (Optional)
• 3 cups Uncooked Pasta
• Salt and Pepper to taste

1. In a large stock pot over medium heat add the butter. Let melt. Then add the onions celery and carrots. Saute for about 3 to 5 minutes or until the onions are translucent. Then move to the outer edge and add the chicken, bay leaves, poultry seasoning, tarragon, thyme, salt and pepper. Cook for about 3 minutes. Add the broth and corn with juices. Bring to a simmer and cook for about 15 minutes. Temp the chicken for doneness. (160f to 170F) Remove the chicken and add the pasta. Cook to instructions on pasta box. While pasta is cooking chop or shred the chicken. When pasta is cooked add the chicken back to the pot. Ready to serve.
