Thaw sausage and add 1 sausage link into each muffin tin, fold in half to fit. You can press the sausage into a patty if desired using the bottom of a measuring cup.

Bake sausages at 400 degrees for 12 minutes and remove the sausages from the muffin tins but leave drippings in the pan. This will flavor our pancakes and prevent things from sticking.

Mix 3 cups of dry pancake mix with 2 & 1/4 cups of water. Add about 2 tablespoons of pancake mix to the bottom of each muffin well. Top with 1 prepared sausage and 1/2 a slice of American cheese. Add remaining pancake batter to the top of each muffin to seal it all in.

Bake muffins at 400 Degrees for 15 minutes.

To freeze, cool to room temperature, add to a sheet pan and freeze. Then place in freezer bags and store in freezer for up to 3 months.

To reheat, either bake from frozen at 350 degrees for 15 minutes or microwave on defrost for 3 minutes for best results.
