This is a soft cookie which I like to have for breakfast. You can make it crispier if you make individually shaped cookies instead of baking it in a square mold.

In any case, these are delicious and use up all of the leftover oat pulp in one go.

Very often I make these just right after making oat milk. This way, I can have milk and cookies to go with it!
