Today in the Berlin lab, we are preparing another vibrant daily green creation using a fresh head of organic oak leaf lettuce: Oak Leaf Salad topped with sweet tomatoes, fluffy cooked quinoa, firm vegan feta cheese, and fresh chives, dressed in a customized Garlic Onion Cashew Dressing!
In this video, I explore the unique culinary physics of tender greens versus firm leaves. When incorporating cooked quinoa into a salad bed, matching the volume to leaf firmness is vital. While robust leaves like Romaine can easily carry 1 full cup of quinoa, tender greens like oak leaf demand a lighter 1/2 cup portion to prevent the leaves from getting weighed down.
I dive deep into the chemistry of flavor balancing. Bitter notes in dark leafy greens are natural and healthy, but they must be balanced using the 5 foundational flavors: sweet, sour, hot, bitter, and salty. I show you how to tweak your Garlic Onion Cashew Dressing with an extra splash of apple cider vinegar, salt, and black pepper to perfectly harmonize a bitter batch of greens!
We elevate the bowl with fresh chives—the mildest, most delicate member of the allium family—and pair them with rich vegan feta. Finally, I demonstrate the dry-tossing technique: why you must combine your dry quinoa, minced yellow onions, and chives with the salad bed before pouring your cashew dressing, so the tiny particles stay light and fluffy without lumping together.
