Sour cherries are very popular in Romania, we make lots of desserts with them. This light cake is easy to make as you only need to combine a few ingredients, add the cherries on top and bake. Hope you will enjoy it as much as I do!

- 4 eggs
- pinch of salt
- 100 g erythritol sweetener / sugar
- 4 egg yolks
- 2 teaspoons vanilla extract
- 125 g flour
- 25 ml vegetable oil
- 300 g pitted sour cherries
- 26 x 16 cm baking pan
- bake for 25 min at 180°C/ 360°F
- powdered sugar (optional)
