This is a delicious and simple peach pie recipe and at only 35p per slice it is well worth a try. A delicious summer dessert that is easy to make and will give you 8 servings.

Pastry

260g / 9.2 oz Plain Flour. 0.14

65g / 2.3oz Unsalted Butter 0.50

65g / 2.3oz Lard 0.13

Pinch of Salt 0.00

3 Tbsp cold water 0.00

Filling.

2 Tins Tinned Peaches 2.20

1 Lemmon 0.22

20g / 0.7oz Brown Sugar 0.07

50g / 1.7 oz Sugar 0.06

2 tsp Cornflour 0.04

Total Cost 2.75

Pastry.

Mix the flour and fat by hand into a breadcrumb.

Cut in the water a little at a time until the dough is formed.

Shape it into two rounds and put it in the fridge for 1 hour.

While the pastry is cooling, make the filling.

Filling.

Strain the peaches and set the syrup aside and put the peaches into a bowl.

Squeeze the lemon and pour the juice over the peaches. Pour the white sugar over the peaches and set aside for about 20 mins.

Strain the peaches again and put the juice into a small sauce pan, add a little of the syrup from the tin and the brown sugar and allow to reduce a little over the heat.

Mix the cornflour with a little cold water and add to the syrup and stir until the syrup thickens.

Roll out the pastry and line a pie tin/plate. Cut the rest of the pastry into strips.

Put the filling into the pastry case and then form a lattise on the top with the strips of pastry.

Bake at 200c / 425f / Gas mark 6 for 10 mins and then turn the oven down to 180c / 356f / Gas m
