Sticky Silan Chicken | Date Syrup Glazed Chicken That’s Better Than Honey

Silan is date syrup — dark, sticky, a little caramel, a little molasses. Mix it with garlic, soy, lemon, and a pinch of spice, roast the chicken until the skin goes glossy and the glaze clings, and you’ve got sweet-savory chicken that belongs over rice, couscous, or just a pile of salad.

- 6–8 bone-in, skin-on chicken thighs (or mixed pieces)
- ⅓–½ cup silan
- 3–4 Tbsp soy sauce or tamari
- 4 garlic cloves, minced or grated
- 1–2 Tbsp olive oil
- 1 large onion, sliced into wedges
- Optional but excellent: 1 tsp smoked paprika or a pinch of Aleppo/Urfa chili, juice of ½ lemon, handful of chopped parsley or cilantro at the end
- Salt and black pepper
אופן ההכנה
- Mix silan, soy, garlic, oil, and any spices. Season the chicken well with salt and pepper.
- Toss chicken and onion wedges in most of the glaze. Reserve a couple of tablespoons for the last basting.
- Arrange skin-side up in a roasting pan or skillet. Roast at 400°F / 200°C for about 40–50 minutes, basting once or twice, until the skin is caramelized and the chicken is cooked through (165°F+ internal).
- Finish with the reserved glaze and a squeeze of lemon. Scatter fresh herbs.
- Serve over rice, couscous, or with roasted carrots/sweet potatoes so the extra glaze soaks in.
- Tips
- Don’t skip basting. That’s how you get the shine.
- If the glaze is too sweet, add more lemon or a splash of vinegar.
- Leftovers are excellent cold the next day.
