• 2. White beans, rinsed and drained
• 3. Cucumber + bell pepper
• 4. Kalamata and Castelvetrano olives
• 5. Scallions + pepperoncini
• 6. Crumbled feta + fresh mint and dill
• 7. Olive oil + lemon juice + garlic + oregano dressing
• Wrap beets in foil → roast at 400F for 45-60 mins until fork-tender → cool, peel, and dice
• Whisk olive oil + lemon juice + garlic + oregano + salt and pepper for the dressing
• Combine beets + beans + cucumber + bell pepper + olives + scallions + pepperoncini + herbs + feta in a large bowl
• Pour dressing over the salad → toss gently to combine
