Some of the best fall treats taste like they came from a bakery, but come together right in your kitchen. Meet my Crumbl-inspired pumpkin roll cookies.

Blot 1/2 cup canned pumpkin dry. Cream 6 tbsp butter with 1 egg and the pumpkin. Mix in 2 bags sugar cookie mix and 2 tsp pumpkin pie spice, then chill 1-2 hours. For the topping, combine 1 tbsp butter, 1/4 cup brown sugar, and 1 tsp pumpkin pie spice. Scoop into 8 cookies, press the topping on, and bake at 350°F for 14 minutes. Cool completely, then whip 1 jar cream cheese frosting and pipe a spiral swirl on top.
