Healthy peanut butter cookies. These cookies are vegan, gluten free, easy to make and so delicious. Goes perfect with cup of milk on the side.

These cookies are made without eggs and flour-less. Enjoy :)

FULL RECIPE:

INGREDIENTS (16 cookies):

2/3 cup natural peanut butter

1/3 cup pure maple syrup (those who like it less sweet, add 1/4 cup)

1/3 cup pecans, chopped (about 35 gram)

2/3 cup almond flour

1/2 teaspoon pure vanilla extract

Pinch of kosher salt

אופן ההכנה

  1. In a large bowl, add peanut butter, maple and vanilla extract. Mix with a fork for 2-3 minutes.
  2. Add almond flour, chopped pecans and a bit of kosher salt. Mix for 2 minutes. Until well combined.
  3. Wrap the bowl and refrigerate for 30 minutes.
  4. Preheat the oven to 350°F (180°C) and place baking sheet on a baking tray.
  5. Scoop the dough with your hands or cookie scoop and roll into a ball.
  6. Flatten each cookie with your fingers and then with a fork.
  7. Bake for 10-12 minutes in the preheated oven.
  8. Remove from the oven and allow the cookies to cool on the pan at least 15 minutes.
