This week I decided to pull 5 random things out of my freezer and turn them into 5 dinners. No extra grocery trip, just using what I already had on hand. It ended up being a fun little clean-out week and a good reminder of how much you can actually make just from your freezer stash. Here’s what we ate:
Dinner 1: Country Fried Pork Chops
I found some pork chops I had picked up for $1.59/lb. Michael doesn’t usually like pork chops, so I turned them into “country fried” pork chops. I breaded them, pan fried until golden, and smothered them in country gravy. Served over mashed potatoes with green beans on the side. classic comfort food and budget-friendly.
Dinner 2: Bratwursts on Homemade Buns
These bratwursts were a 50% off find. I tried making homemade hot dog buns, but honestly, they came out more like dinner rolls (not worth the effort!) Still, the brats were tasty (Michael said next time don’t slice them!) and it made for an easy weeknight meal.
Dinner 3: Chicken Taco Chili Nachos
Markdown chicken breasts ($3 off) went into the slow cooker with veggies from my fridge, canned beans, tomato sauce, diced tomatoes, corn, and taco seasoning. It thickened up a lot, so I served it nacho-style over tortilla chips with cheese, sour cream, and avocado. Basically chicken chili nachos...so good.
Dinner 4: Teriyaki Chicken with Sheet Pan Fried Rice
