I got home late last night and decided to meal prep, I couldn’t film a full length video for this one but the recipe turned out soooo good I wanted to share it on YouTube also! I didn’t want to upload it in multiple parts so I’m just going to upload it as a regular video instead of a short. I hope that is okay! Not ideal but I didn’t want you all to miss out on the recipe.

Makes 6 meal preps (12 total enchiladas)

Prep work: Shred cheeses and combine. Dice thawed steak cut fries
In a skillet brown and crumble sausage, add thawed and drained pepper stir fry, and drained rotel. Continue to cook over medium high heat until any extra liquid evaporates off. Remove sausage mixture but leave drippings, add extra oil if needed and fry potatoes until crispy.
Toss potatoes and sausage mixture to combine and warm refried beans in microwave.
Spread a layer of beans onto each flour tortilla and top with 1/3 cup of sausage mixture. Roll and add to a container (2 enchiladas per container) top with enchilada sauce and shredded cheese.
Store in fridge for 5 days, or freeze for long term sto
