These tomato stir-fried noodles come from something simple we grew up with… noodles with a tomato base, a little tangy, and made with everyday ingredients.

Over time, it’s changed depending on what we have on hand. In this version, everything is brought together in the pan. The tomatoes cook down with paprika, garlic, and herbs, then the noodles are stir-fried right into the sauce until evenly coated.

Kevin makes it this way now, adding vegetables and pan-fried tempeh for a more complete meal. The tempeh is lightly crisped and finished with soy sauce, bringing a deeper savoury note to the dish.

It’s simple, adaptable, and one of those meals we come back to every so often. If you’re looking for an easy vegan dinner or a different way to make tomato stir-fried noodles, this is a good place to start.
