Flour, Semolina and Boiling water - I never get tired of making this cheese bread! No rolling pin❗ The recipe for this cheese bread was kept a secret by my cunning American grandfather all his life! Recipe and ingredients:

2 1/4 cups flour (360 gr).

Add 1 sachet of baking powder (10 g).

Sift the flour.

Semolina 4/5 cups (130 g).

Stir all the ingredients.

1 1/5 cups boiling water (300 ml).

Add 1/2 tsp salt and 1 tsp sugar.

Stir.

Add hot water and stir with a spoon.

Knead the dough by hand for 2 minutes.

Cover the dough for 20 minutes.

Grate 200 grams of mozzarella cheese (or other cheese of your choice).

Divide the dough into 4 parts.

Make a ball out of each piece.

Brush each ball with olive oil.

Cover the dough with clingfilm and let it rest for 15 minutes.

Make a thin cake out of the ball with your fingers.

During the stretching process, the dough may tear a little into small holes.

It's okay, you don't need to do anything about it.

Melt 125 grams of butter (1/2 cup).

Brush the rolled out dough with melted butter.

Sprinkle with grated cheese.

Roll the dough into a log and press it down a little.

Do not use a rolling pin, do everything with your hands.

Make a flat shape about 8 inches in diameter (20 cm).
