🍯 HONEY COOKIES

Makes about 24 cookies

• ⅓ cup neutral oil

• ½ cup honey

• ½ cup packed brown sugar

• 1 egg

• 1 tsp vanilla extract

• 1½ cups all-purpose flour

• 1 tsp baking soda

• ¼ tsp salt

• 1 tsp cinnamon, optional

• 2 tbsp sugar, for rolling

1️⃣ Preheat oven to 350°F and line a baking sheet with parchment paper.
2️⃣ Whisk oil, honey, and brown sugar until smooth.
3️⃣ Add egg and vanilla and mix until incorporated.
4️⃣ In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
5️⃣ Gradually add the dry ingredients to the wet ingredients until a soft dough forms.
6️⃣ Scoop tablespoon-sized portions, roll into balls, and coat in sugar.
7️⃣ Place 2 inches apart on the baking sheet.
8️⃣ Bake for 10–12 minutes. Let cool for a few minutes before transferring to a wire rack.
🥶 FREEZER TIP: These cookies freeze beautifully! Place parchment paper between each cookie so they don’t stick.
