Episode 8: How Many Dinners Can I Make with $40?

Hash Brown Breakfast Bowls

Breakfast for dinner is always a good call, and tonight it stretched the budget even further with a few smart leftovers.

Here's what I grabbed today:

A box of dried hash browns

A package of country gravy mix

I rehydrated the hash browns per the box instructions and browned my 4 reserved sausage links from the spaghetti episode. Drain the hash browns, then fry them in a mix of sausage fat and vegetable oil (about 1/4 cup total) over medium to medium-high heat for 10 minutes, flipping halfway.

Prep the country gravy mix and fry or scramble 4 eggs. To build the bowls, divide the hashbrowns between two bowls and top with gravy, sausage, eggs, and a little more gravy. An amazing meal on the 8th day!
