Grease a 1.2 lt (2 pint) pudding basin and place a circle of greaseproof paper on the bottom of the basin.
In a mixing bowl mix together the flour, breadcrumbs, suet, sugar and lemon zest.
Peel and chop the apple and add it to the mix along with the golden syrup and beaten eggs.
Pour the mixture into the pudding basin and cover the tip with some pleated greaseproof paper. Seal the basin in tin foil and tie up with string.
To steam the pudding, put enough hot water in a large pan so that it will come about halfway up the pudding basin. Put an upturned plate on the bottom of the pan, place the pudding on the plate and put the lid on the pan. Simmer and steam for about 1 1/2 hours. Test with a skewer.
Serve hot with hot custard.
A delicious steamed pudding, great with pouring custard.
